    Global's G3 classic carving knife, is long and narrow in order to carve those perfect Sunday beef joints. There is only one G series carving knife and it is a specialist knife that is not well suited to other tasks, but that should not really matter, because the best cuts of meat demand the best equipment. Having a super sharp Global carving knife will ensure all your cuts of meat are thin and tender.Global knives have been hand crafted in Japan using the same tradition for over 30 years and are developed using the best raw materials available. Like the Samurai swords before them, each knife is carefully weighted to ensure perfect balance in the hand.


    The two most innovative features of Global knives are their edge and the way they are balanced. The most important feature of any knife is its edge, and the Global edge is truly its signature. This way they are truly comfortable and easy to handle, and meet the most demanding requirements of professional and amateur chefs alike.

    The G Series consists of larger knives in the Classic collection made from a three-piece construction. Firstly, the handle is made from two identical pieces which is welded together and polished - making a hollow handle. This unique handle is then carefully fused to the patented CROMOVA 18 Stainless Steel blade before being filled with a special sand to perfectly balance the weight of the knife. The G-Series is great for general preparation and for the more adventurous chef.

    Yoshikin uses its own proprietary stainless steel called CROMOVA 18 Stainless Steel, which has been designed exclusively for Global knives. This steel is hard enough for Global knives to hold that steep acute cutting edge for a long time, yet soft enough so that it is not too difficult to sharpen. The CRO in CROMOVA 18 stands for chromium and the 18 is the percentage of chromium in the steel. This high percentage of chromium contributes to Global’s excellent stain resistance.

    The majority of the Global knives are sharpened or ground on both sides of the blade, just like Western style knives. However, their edges are ground steeply to a point and to an acute angle. This is in contrast to Western or European knives that use a beveled edge. The straight edge results in a dramatically sharper knife which stays sharper longer. The edge on a Global knife is so large and prominent that it is easily seen with the naked eye and extends a quarter of an inch or more up from the tip of the knife. It is often asked why Global knives stay sharp so long without sharpening. The combination of the elements molybdenum and vanadium is one reason, but also refer back to the diagrams above of the straight edge vs. the beveled edge.
  • Care
    SAFETY
    Global knives have edges that are razor sharp. To obtain such sharp edges Global knives are factory sharpened at an angle between 10 and 15 degrees. Sharpening at this angle results in a thinner edge, so some words of caution are necessary.

    STORAGE
    Global knives are very sharp and should be carefully stored to avoid accidents and kept out of the reach of small children. Global recommends the use of the Global knife blocks, magnetic wall racks, knife docks or knife rolls/cases.

    CLEANING
    It is recommended that you wash your Global knives by hand using a mild dishwashing liquid and water. After washing, rinse with water and dry thoroughly with a towel. Global knives should NOT be put in the dishwasher. Doing so could damage the sharp edges should they come into contact with other objects in the dishwasher. In addition, exposure to extreme heat and powerful detergents found in dishwashers can be harmful to CROMOVA 18 high carbon stainless steel.

    SHARPENING
    Even the finest materials need care to keep them at their optimum sharpness. GLOBAL recommends periodically sharpening your knives using either a waterstone or ceramic stone. In between stone sharpening’s, it is recommended that you use the Global fine ceramic or diamond rod to keep the edges of your knives aligned. Global serrated knives do not need to be sharpened.
